Some days you want comfort food. Some days you want something quick. And some days you want both without washing half your kitchen. This recipe ticks all three.
We’re taking sweet potatoes, making them soft inside and a little crispy outside, stuffing them with butter and mozzarella, then topping everything with juicy Zulekha Chicken Tikka Skewers. It’s simple, filling, and honestly feels like way more effort than it actually is.
Perfect for a quick dinner, a cosy lunch, or when you just want something warm and satisfying without overthinking it.

What you’ll need
-
3 sweet potatoes
-
A little butter
-
Mozzarella cheese (grated or torn)
-
1 small onion, thinly sliced
-
Some sweet pepper, finely chopped
-
Parsley, for garnish
-
Salt and pepper (optional)
How to make it
1. Air fry the sweet potatoes
Wash your sweet potatoes and pop them into the air fryer. Cook until they’re soft inside and slightly crispy outside. This usually takes around 25 to 30 minutes depending on size. You should be able to easily push a knife through the middle.
2. Cut and mash
Carefully cut each sweet potato in half. Add a little butter to the inside and gently mash the flesh with a fork, just inside the skin. You’re not making it totally smooth, you want some texture.

3. Add the cheese
Sprinkle mozzarella over the mashed sweet potato and gently smash it in so it melts into the warm potato. This is where it gets really comforting.
4. Top with veg
Add some sliced onion and chopped sweet pepper on top of the cheesy sweet potato. You can season lightly with salt and pepper if you like.

5. Heat the skewers
Put the Zulekha Chicken Tikka Skewers into the air fryer and heat them for about 4 minutes, until they’re hot and juicy.
6. Assemble
Place the hot chicken tikka skewers on top of the loaded sweet potatoes. Finish with a sprinkle of parsley for a fresh touch.
